CHICKEN MANGO SALAD BY CHEF DEEMA HAJJAWI

INGREDIENTS

For the Chicken
5 chicken breasts, diced
1 tsp Chef Deema x A Spice Affair’s Everything Chicken Seasoning or Montreal Chicken Seasoning
1 tsp A Spice Affair’s Lemon Pepper
Salt & Pepper, to taste
olive oil

For the Dressing
½ cup balsamic vinegar
2 tbsp honey
½ cup olive oil
½ cup dijon mustard
Juice of ½ lemon
Salt & Pepper, to taste

For the Salad
6 cups mixed greens
2 mangoes, cubed
2 avocado, cubed
1 red pepper, diced

For Garnish
2 green onions, sliced
½ cup coriander leaves, roughly chopped
¼ cup mint leaves, roughly chopped
½ cup roasted peanuts, chopped


PREPARATION
1. In a frying pan, heat 2 tablespoons olive oil over medium high heat. Add in the chicken, Black Pepper, Everything Chicken Seasoning, Lemon Pepper and stir. Add in the Pink Salt and let cook for about 6 minutes, stirring occasionally, until browned or cooked through. Set chicken aside to cool down.

2. In a mason jar, combine dressing ingredients and shake until smooth.

3. In a large serving bowl, layer salad ingredients, cooked chicken, and garnish with green onions, coriander, mint, and peanuts. Drizzle salad dressing and enjoy!
